Baked Quince

  • 2 large quinces
  • 3-4 cups water
  • 1 knob butter
  • 2 cups sugar
  • Creme fraiche or ice cream to serve (optional)
  1. Wipe the quince over with a damp cloth to remove fur
  2. Core & quarter quinces then place into a heavy casserole dish with water & butter
  3. Sprinkle sugar on evenly.
  4. Place into oven at 200F or 100ºc overnight, or for approximately 6 – 8 hours. They should be a beautiful deep red colour and the syrup reduced.
  5. Serve alone with creme fraiche, ice cream of yoghurt
