Kale, Blood Orange and Avocado salad

Kale, Blood Orange and Avocado… this salad is almost too good for you!

Ingredients

1 bch baby kale (roots cut off)

1 witlof (cut in half lengthwise, then remove core and separate leaves)

¼ cup currants

1 avocado chopped

1 blood orange, peeled and sliced into rounds

¼ red onion chopped finely

¼ cup toasted pumpkin seeds (pepitas)

1 handful of fresh walnuts, shelled and toasted

Dressing

2 tablespoons blood orange juice

5 tablespoons walnut oil

1 teaspoon ground cumin

salt flakes, ground black pepper

Method

  • Cut the roots off the Kale, leaving just the leafy green part
  • Cut the Whitlof in half lengthways, remove core and separate the leaves
  • Combine all the salad ingredients together in a bowl
  • In a separate bowl, whisk together dressing ingredients
  • Add dressing to salad just before serving
