Artichoke Omelette

A perfect way to start a winter’s morning, fresh artichoke omelette…

Ingredients (serves 4)

4 Artichokes

8 Egg, beaten lightly

Butter

Parmesan

Grilled Ciabatta rubbed with garlic, to serve

Method

  • Cut open the artichoke and remove the fluffy choke from the centre with a spoon or knife
  • Remove a couple of the very outer leaves and then wash the artichoke thoroughly
  • Slice the artichokes and sauté them in butter until half cooked, without letting them colour.
  • Tip into a bowl with 8 beaten eggs and season.
  • Butter your pan and pour in artichokes and eggs cook until golden, sprinkle with parmesan.
