Balinese Pork cooked on Lemongrass Skewers
Makes approx 10 skewers
Ingredients
1 long green chilli
1 clove Garlic
2 French Shallots, peeled
1cm piece fresh Ginger
1cm Galangal
1/2cm piece fresh turmeric
2 kaffir lime leaves
1/2 tablespoon of tamarind pulp
1/4 teaspoon sugar
1 pinch ground nutmeg
1 teaspoon shrimp paste
1 tablespoon peanut or coconut oil
500g minced pork
1 tablespoon coconut cream
10 lemongrass stalks, outer casing removed
Fresh lime for serving
Method
- Pound or blitz first 11 ingredients (chilli, shallots, ginger, galangal, turmeric, lime leaves, tamarind, sugar, nutmeg, shrimp paste)
- Add oil to sauté pan and fry off the paste until fragrant. Check for seasoning.
- Remove from heat and allow to cool
- In a bowl, combine cooled cooked paste, with mince and coconut cream
- Divide mixture roughly into 10 portions and then, using your fingers, wrap each portion around the end of the prepared lemongrass stick, being mindful not to overwork the mixture
- Brush with a little oil then grill or barbecue for about 6 minutes, turning frequently
- Serve immediately with a squeeze of fresh lime
