Healthy Broccoli salad with Quinoa and Almonds

Ingredients

1 cup Quinoa

1 cup Farro

2 heads of Broccoli chopped into small pieces

1⁄4 cup roasted Almonds

1 sm Red Onion, finely chopped

1 bch Parsley, finely chopped

1⁄2 bch Mint, finely chopped

2 tbsp Capers

1 Lemon

1/4 Cup Extra Virgin Olive Oil

salt flakes, ground black pepper

Method

  • Cook the Quinoa and Farro as per the instructions on the pack and then set aside to cool
  • Meanwhile, quickly blanch the Broccoli and then refresh under cool water. Set aside
  • Once cool, spread the Quinoa and Farro evenly over the bottom of a shallow salad bowl and season with salt and pepper
  • Add the chopped Broccoli, Onion, Almonds, Capers, herbs and the zest of the lemon
  • In a separate bowl, mix together the juice of the lemon and the olive oil and pour over shortly before serving
