Celeriac Chips with Rosemary Salt
Celeriac chips are a fantastic, flavour-packed replacement for potato chips. Celeriac can be used in the exact same way as potatoes, but has more flavour, and is better for you! Win-win-win!
Ingredients (serves 2 – 3 people)
- 1 large Celeriac
- canola oil
- 1 large sprig of fresh rosemary
- 3 – 4 generous pinches of sea salt flakes
Method – Rosemary Salt
- Remove the leaves from the Rosemary sprig
- Add the rosemary and sea salt to a dry fry pan at a ratio of 1:2 – dry-fry for a few minutes until fragrant
Method – Celeriac Chips
- Peel off the rough outside layer of the celeriac, then cut into thin batons for chips
- Place the celeriac chips into a saucepan with cold, salted water, and bring to the boil
- Simmer until the celeriac is just tender, then drain and allow to dry fully (pat dry if necessary)
- Heat oil in a saucepan or deep fryer to 180c, then fry in batches until golden and crispy
- Serve hot, with rosemary salt
