Dom’s Pasta Broccoli
The ultimate mid-week recipe. Super simple, super speedy, super delicious – Pasta Broccoli
Ingredients (serves 4)
- 2 small heads Broccoli, cut into small florets
- Pasta of your choice (we use Orecchiete or Casareccia)
- 1 – 2 long red chilli (depending how spicy you want it), finely chopped
- 1 fillet anchovy (or use Capers to make vegetarian), finely chopped
- 4 cloves garlic, finely chopped
- Extra Virgin Olive Oil
- Salt
- Dry White Wine
- Parmesan cheese
Method
- Bring a large pot of heavily salted water to the boil
- Meanwhile, place a good glug of olive oil in a large, deep-sided fry pan. Heat over medium-high
- Add the chilli and anchovy (or capers if using) cook for 2 min
- Add the garlic and cook for 30 seconds
- Immediately add a good splash of white wine to stop the garlic from burning. Allow to cook down (approx 6 minutes)
- Add the broccoli to the boiling water and cook until 3/4 cooked, approx 6 – 7 minutes
- Using a slotted spoon, transfer the cooked broccoli to the fry pan. Turn the heat down to medium-low and stir to coat. Continue to cook, adding small splashes of olive oil or white wine if getting dry
- Add the pasta to the water and cook until al dente
- When cooked, transfer the pasta to the fry pan and stir to coat. Season well with salt and pepper, and grate over a generous amount of parmesan cheese
- Use pasta water to loosen and create the sauce
- Serve immediately
