Gina’s Rhubarb and Yoghurt with Brioche

Ingredients

1 bunch of rhubarb

¾ cup sugar

1 tbsp water

1 tub of Greek yoghurt

Brioche

Method

  • In a large, shallow saucepan combine sugar and water and heat until the sugar is dissolved.  Add the rhubarb to the saucepan and cook until tender. (Note – do not stir the rhubarb too much as it will break up.)  Set aside.
  • Slice the brioche to the thickness you prefer and toast lightly.
  • To assemble, simply put a toasted slice of brioche onto a plate and spoon two large tablespoons of yoghurt on top.  Spread gently to cover brioche then spoon two tablespoons of rhubarb on top.
  • Drizzle some of the remaining rhubarb liquid over the top and serve.
  • Delicious for brunch or dessert
  • (For extra decadence, make the Brioche into French toast)
