Moroccon Roasted Sweet Potato

It’s not hard to imagine yourself in Marrakech with this Moroccan roasted sweet potato. It also not hard to make!

Ingredients

1 kg sweet potatoes, washed and cut into chunks

Olive oil

1 tsp ground cumin

½ tsp ground cinnamon

1 cup fresh coriander leaves, finely chopped

Handful of pepitas (pumpkin seeds)

Method

  • Preheat the oven to 200ºC.
  • Toss the sweet potato in some olive oil and the spices and roast for 1 hour or until cooked through
  • Arrange the sweet potato on a platter, drizzle with olive oil, sprinkle with Pepita seeds and coriander leaves, and serve.
  • Easy!
