Smoked trout and avocado pasta



2 diced avocadoes

1/2 bunch of finely chopped chives

1/2 bunch of finely chopped dill

200g smoked trout (sliced into ribbons)

400g spaghettini 

1/2 cup extra virgin olive oil

juice of 1 lemon

salt flakes, ground black pepper



  • Cook pasta according to the instructions on the pack.  
  • While the pasta is still warm, toss through the Smoked Trout and Olive oil and toss well.
  • Add the Avocado, Chives, Dill and lemon juice and gently fold through the pasta (ensuring the avocado does not break up too much)
  • Season with salt and pepper and serve straight away
  • (Note: If the pasta turns out dry, add a splash more olive oil to loosen)
