Grilled Zucchini and goat’s cheese salad

A very quick and easy salad. Combines sweet and smoky grilled Zucchini with creamy goats cheese and fresh herbs

 

Ingredients

FOR THE SALAD:

4 zucchini, trimmed top and bottom, cut into 2mm lengths

¼ cup extra virgin olive oil

150g marinated feta

1 handful of mint leaves (no stems)

1 handful of Italian parsley leaves (no stems)

½ handful of toasted walnuts

1 garlic clove cut into half

FOR THE DRESSING:

1 tsp finely grated lemon zest

3 tbsp walnut oil

1 tbsp lemon juice

Method

  • Rub each side of the zucchini slices with the cut garlic, then lightly brush each side with extra virgin olive oil
  • Season and grill or barbecue for 5 min each side or until the black strips are visible, indicating that caramelisation has occurred 
  • Combine the zucchini with the herbs, feta and toasted walnuts
  • Dress well and serve immediately
